Valsamic is our homegrown balsamic alternative made at our farm in Virginia. It’s sweet and syrupy with a gentle tartness and notes of oak and grape. Use it anywhere you’d use balsamic vinegar: drizzle it over mozzarella and tomatoes, make a vinaigrette for tender greens, or glaze cuts of beef, pork, and lamb.
We make our Valsamic with one of the unsung treasures of the South, native crabapples, which are full of mouth-puckering tannins and polyphenols that yield an excellent, complex vinegar. We combine these crabapples with select heirloom sweet apple varieties, some apple blossoms for good measure, and wildflower honey, then we age the lot in applewood for our spin on that oak barrel flavor.
