Flavor Profile: Medium-high acidity, low sweetness
Tasting Notes: All about the ginger; super floral but without the heat, some light citrus and floral tones but it all comes back to ginger.
Kitchen Pairings: Super flexible; anywhere you would incorporate ginger and lime or apple cider vinegar, try using this instead. It works anywhere.
Bar Pairings: Excellent with Light and Dark Rum, Tequila and Mezcal. Good substitute for ginger beer and/or ginger juice in cocktails.

Lovely vinegar

I love it; haven't used it yet. When I tried it, the ginger flavor wasn't as intense as the description had led me to believe it would be, but it's very, very nice anyway! Also -- their customer service is excellent.
