Our second collaboration with The Inn at Little Washington! If Montmorency celebrates the orchard in full bloom, our Asimina paw paw balsamic looks deeper into the woods here on the farm where North America’s largest native fruit hangs heavy in late summer. Paw paws have long been a forager’s secret: custardy, tropical, and fleeting. We work fast to capture that delicacy at its peak.
While the fresh paw paws are fermenting, we add the warm, comforting spices that naturally frame paw paw’s softness: cinnamon, star anise, and vanilla. As the balsamic ages, these elements meld together with New American oak and give the vinegar a velvety richness and a lingering warmth. The result is a deep amber balsamic that tastes unmistakably Appalachian.

This stuff is amazing. We’ve used it to create wonderful nonalcoholic drinks so far and think it would go great with roasted root veggies or chicken. It’s just so delicious by itself that we want to make sure we don’t hide it.
Wonderful! Best I’ve ever tasted. I used it in a fruit salad, and then with an oil for dipping ciabatta. Different and better than anything I’ve ever tasted.
