Juniper Vinegar

Flavor Profile: Medium-high acidity and just a touch of residual sweetness
Tasting Notes: Much less astringent than typical juniper, and is slightly buttery with super defined citrus notes of naval orange, satsuma, and Myer lemon. The wood is very present and the cedar is almost reminiscent of New American oak.
Kitchen Pairings: Use this with root vegetables, game meat, and fatty fish. Also makes a great in a marinade!
Bar Pairings: Try a Tom Collins, gimlet, or any other gin cocktails.
