Montmorency Cherry Balsamic | The Inn at Little Washington


Ripe Montmorency cherries are paired with our house-brewed cherry blossom vinegar, then gently fermented and reduced until they take on a deep, syrupy texture. Into this foundation, we weave the scents of spring itself: cherry blossoms, magnolia petals, bay leaves, cracked black pepper, and slowly caramelized trifoliate orange—each allowed to slowly steep into the balsamic over days. 

The Inn At Little Washington is a legendary establishment for anyone coming up in the Virginia culinary scene, and it goes without saying that we’re no exception. The decades of incredible work done at the Inn by Chef Patrick O’Connell has had such a huge influence on our work, you can only imagine how flattered we’ve been to count them as customers over the years.
