Baked Apple and Burrata Salad

Burrata
Little Wild Things greens
50ml
Lindera Farms Violet Vinegar or Viola Vinegar (
exclusively available through Little Wild Things salad share program)
1 tsp salt
1/4 medium sized shallot
2 medium sized apples
1 tsp mustard
3 tbsp extra virgin olive oil
dill
violas
Lindera Farms Tomato Hickory SaltApples:
- Preheat oven to 350F.
- Cut one of the apples into 1/4" slices.
- Toss with 1 tbsp extra virgin olive oil, salt, and 1 tbsp of the vinegar, reserving the rest for the vinaigrette.
- Bake for 5-10 minutes until pliant.
- Allow to cool and reserve.
Vinaigrette:
- Mix the remaining vinegar, oil, mustard, and salt together in a sealable container.
- Shake vigorously to mix the vinaigrette.
Plating:
- Slice the shallot quarter as thinly as possible.
- Toss with the dill and greens together in a bowl and dress with the vinaigrette.
- On a plate, place the sliced apples around the edge and the burrata in the center.
- Layer the dressed greens, dill, and shallot mixture on top of the apples.
- Garnish with violas, dill, and the Tomato Hickory Salt.
