Baked Apple and Burrata Salad

Burrata
Little Wild Things greens
50ml Lindera Farms Violet Vinegar or Viola Vinegar (exclusively available through Little Wild Things salad share program)
1 tsp salt
1/4 medium sized shallot
2 medium sized apples
1 tsp mustard
3 tbsp extra virgin olive oil
dill
violas
Lindera Farms Tomato Hickory Salt


Apples:
  1. Preheat oven to 350F.
  2. Cut one of the apples into 1/4" slices.
  3. Toss with 1 tbsp extra virgin olive oil, salt, and 1 tbsp of the vinegar, reserving the rest for the vinaigrette.
  4. Bake for 5-10 minutes until pliant.
  5. Allow to cool and reserve.

Vinaigrette:

  1. Mix the remaining vinegar, oil, mustard, and salt together in a sealable container.
  2. Shake vigorously to mix the vinaigrette.

Plating:

  1. Slice the shallot quarter as thinly as possible.
  2. Toss with the dill and greens together in a bowl and dress with the vinaigrette.
  3. On a plate, place the sliced apples around the edge and the burrata in the center.
  4. Layer the dressed greens, dill, and shallot mixture on top of the apples.
  5. Garnish with violas, dill, and the Tomato Hickory Salt.
