Citrus & Bitter Greens with Golden Elixir Vinaigrette

¼ cup Golden Elixir Vinegar
2 tbsp extra virgin olive oil
kosher salt and freshly ground black pepper, to taste
1 small head radicchio, torn into bite-sized pieces
1 grapefruit, peeled, sliced crosswise, and quartered
2 Cara Cara oranges, peeled, sliced crosswise, and halved
3 tbsp pistachios, chopped
- In a large bowl, whisk together the vinegar and olive oil. Season with salt and pepper to taste.
- Add the torn radicchio, grapefruit, and oranges. Toss, taste, and add more salt and pepper if needed.
- Transfer to a platter or divide between plates and top with pistachios. Serve right away.
