Grilled Eggplant & Gazpacho Dressing

1½ tbsp tomato paste
1 clove garlic, grated
1/3 cup Gazpacho Vinegar
1½ tbsp cucumber, finely diced
1½ tbsp tomato, finely diced
1½ tbsp bell pepper, finely diced, optionally roasted
1/2 tsp sweet paprika
1 tbsp honey
½ tsp salt
½ tsp black pepper
1/3 cup olive oil
basil
parsley
oregano
cherry tomatoes
Manchego cheese

  1. Whisk together tomato paste, vinegar, salt, paprika, black pepper, honey, and garlic.
  2. Slowly drizzle in olive oil while whisking.
  3. Fold in diced vegetables.
  4. Serve with grilled eggplant, Manchego cheese, herbs, and cherry tomatoes.
