2 lbs frozen red tart whole pitted cherries, thawed
1/3 cup white granulated sugar
1/3 cup light brown sugar
2 tbsp cornstarch
2 tbsp Lindera Farms Cherry Blossom Vinegar
1/8 tsp salt
- In a large bowl, gently stir together the cherries, white and brown sugar, vinegar, and salt.
- Sprinkle in the cornstarch and let the mixture sit for about 5 to 10 minutes, then gently stir again until combined.
Cobbler Batter
1 cup all-purpose flour
1 cup white granulated sugar
1 cup milk
2 teaspoons baking powder
1/8 teaspoon salt
1/3 cup unsalted butter, melted
1 1/2 tbsp light brown sugar
- Preheat oven to 350 F.
- In a medium bowl, mix the flour, sugar, milk, baking powder and salt.
- Pour the melted butter into a 9” x 9” baking dish, then pour the flour mixture over butter.
- Add the cherry mix, but don’t stir it into the batter.
- Sprinkle the remaining light brown sugar over top.
- Bake the cobbler for about 50 - 60 minutes, or until golden brown.
- Best served warm with vanilla ice cream.
