Truffle Potato Salad

Vinaigrette

3 tbsp Lindera Farms Truffle Vinegar
1 tsp Dijon mustard
1 egg yolk
5 tbsp extra virgin olive oil
1 tsp truffle oil (optional)
1 tsp salt
ground black pepper

  1. Mix vinegar mustard yolk and salt in bowl
  2. Slowly drizzle in oil until emulsified but still loose

Salad
6-7 total red russet, Yukon gold, and purple Peruvian potatoes
dill, finely chopped
parsley, finely chopped
chives, finely chopped
shallot, finely chopped
salt
ground black pepper
black truffle (optional)

  1. Cook potatoes in salted water until fork tender, but not falling apart
  2. Allow potatoes to cool, then toss with vinaigrette and garnish with fresh herbs and slices of truffle
